Sausage-Stuffed Cherry Peppers

Sausage-Stuffed Cherry Peppers

Cook Time: 20 minutes

Sausage-Stuffed Cherry Peppers

Ingredients

  • 8 ounces of Bass Farm Sausage
  • 2 (14oz.) jars Peppadew cherry peppers (about 32), or other type of jarred cherry peppers
  • 1 tsp olive oil
  • chopped parsley, optional

Instructions

  1. Drain the peppers. If using non-Peppadew brand peppers, you may need to remove the stem and seeds with a melon baller.
  2. Pinch off a piece of sausage and stuff each pepper. Cover a baking sheet with foil and rub with the olive oil. Place the peppers, evenly spaced, on the pan.
  3. Bake in a preheated 375 degree oven for 20 minutes. Best served at room temperature.

Ralph’s Sausage Gravy and Biscuits

Serving Size: Serves 4 to 6

Ralph’s Sausage Gravy and Biscuits

Ingredients

  • 8 ounces Bass Farm Sausage
  • 2 tablespoons shortening or lard
  • 3 tablespoons flour
  • 1 1/2 to 1 3/4 cups milk
  • salt and pepper, to taste
  • dash cayenne pepper, optional

Instructions

  1. Cook sausage in medium skillet over MEDIUM-LOW heat, stirring and breaking up with a spatula. With a slotted spoon, removed the browned crumbled sausage to a paper towel-lined plate. Add 2 tablespoons of shortening, vegetable oil, or lard to the drippings in the skillet. Add flour, stirring until blended and bubbling.
  2. Gradually add 1 1/2 cups milk; continue stirring and cooking until thickened and bubbly. Add the crumbled sausage. If too thick, add a little more milk.
  3. Taste and add salt and pepper. Stir in a dash of cayenne pepper, if desired.
  4. Serve over hot split and buttered biscuits. Serve sliced tomatoes or fresh fruit with these, or serve as part of a bigger breakfast.

Layered Taco Dip

Layered Taco Dip

Yield: 8 cups or 64 servings

Layered Taco Dip

Ingredients

  • 1lb. Bass Farm Sausage Mild or Hot
  • 1 pkg. (1.25 ounces) taco seasoning mix
  • 3/4 cup water
  • 1 can (15 ounces) black beans, drained, rinsed
  • 1 cup guacamole (optional)
  • 1 cup sour cream
  • 1/4 cup salsa
  • 6 green onions, chopped
  • 2 cups finely shredded lettuce
  • 1 cup (4 ounces) shredded Mexican cheese blend
  • 1 tomato, seeded, chopped
  • Tortilla chips for serving
  • Additional salsa (optional)

Instructions

  1. Mix sausage, seasoning mix and water in large nonstick skillet. Bring to boil on MEDIUM heat. Reduce heat to MEDIUM-LOW; simmer 10 minutes, stirring occasionally. Cool 10 minutes.
  2. Spread sausage mixture onto bottom of 9-inch pie plate; cover with beans. Top with guacamole, if desired.
  3. Mix sour cream and salsa until well blended; spread over guacamole. Top with onions, lettuce, cheese and tomato. Serve with chips and additional salsa, if desired.

Cook Time: 18 minutes

Sausage Muffins

Ingredients

  • 1 lb. Bass Farm Sausage Mild or Hot
  • 3 cups Bisquick
  • 8 oz. Sharp Cheese
  • 1 can Campbell's Cheese Soup
  • 1 tsp. onion powder
  • 8 oz. Mexican cheese
  • 3/4 cup Buttermilk
  • 1 cup fiesta nacho grated cheese

Instructions

  1. Put 1 lb. of Bass Farm Sausage in the microwave for one minute to get soft.
  2. Add the remaining ingredients and mix well.
  3. Put in little miniature muffin pans.
  4. Bake @ 375 degrees for 15 to 18 minutes.

Sausage Alfredo with Spinach

Sausage Alfredo with Spinach

Yield: 6 servings

Sausage Alfredo with Spinach

Ingredients

  • 1 pkg. Bass Farm Mild Sausage
  • 1 cup chopped onion
  • 1 tablespoon minced garlic
  • 1/2 cup dry white wine or chicken broth
  • 1/2 pound fettuccine,cooked,drained
  • 2 cups whipping cream
  • 1 cup grated Parmesan cheese
  • 1 bag (6 ounces) baby spinach leaves (approx. 8 cups)
  • Black pepper to taste

Instructions

  1. Cook sausage, onion, and garlic in stockpot over MEDIUM-HIGH heat 8-10 minutes or until sausage is thoroughly cooked, stirring frequently; drain. Return sausage mixture to pan.
  2. Stir in wine. Bring to boil. Reduce heat to MEDIUM; cook 4-5 minutes or until most of the wine (chicken broth) is cooked off.
  3. Add pasta, cream and cheese; bring just to a boil, stirring constantly. Cook and stir 4-5 minutes or until cheese is melted and sauce is thickened. Remove from heat.
  4. Stir in spinach; cover. Let stand 3 minutes. Season with pepper. Yields 6 servings.

Sausage Dip

Ingredients

  • 1 package Bass Farm Mild Sausage
  • 1/2 package Bass Farm Hot Sausage
  • 1 medium onion, chopped
  • 1 8-ounce package cream cheese, cubed
  • 2 cups sour cream
  • 2 14.5 ounce cans petite diced tomatoes, drained
  • 2 ounces chopped jalapenos
  • Corn or Tortilla chips

Instructions

  1. Cook sausage and onion in large skillet over medium-high heat 8 to 10 minutes or until thoroughly cooked, stirring frequently; drain.
  2. Add cream cheese; stir until melted. Spoon mixture into a 3-4 quart slow cooker. Add remaining ingredients; mix well.
  3. Cook on low setting 2 to 3 hours or until hot, stirring occasionally. Serve with tortilla or corn chips.
