Baked White Potatoes stuffed with Sausage

Baked White Potatoes stuffed with Sausage

Cook Time: 45 minutes

Ingredients

  • 1 medium size baking potato
  • 1 package ground Bass Farm Sausage (Hot or Mild)

Instructions

  1. Core medium size baking potato.
  2. Fill Center with Bass Farm Hot or Mild Sausage.
  3. Wrap in foil, bake at 450 degrees for 45 minutes.
  4. Serve hot. (Sweet potatoes and apples are also great stuffed with sausage!)

Sausage Egg Casserole

Sausage Egg Casserole

Cook Time: 25 minutes

Yield: 6 servings

Ingredients

  • 4 hard cooked eggs
  • 1/4 cup butter or margarine, melted
  • 1/4 cup sifted all-purpose flour
  • 1/2 teaspoon salt
  • 1 dash pepper
  • 2 cups milk
  • 1 pound Bass Farm Sausage (mild or hot), cooked and drained
  • 1 can (2 cups) whole kernel corn, drained
  • 1 cup soft bread crumbs

Instructions

  1. Slice 2 of the hard cooked eggs into 1 1/2 quart casserole.
  2. In saucepan melt butter or margarine, blend in flour, salt and pepper. Add milk all at once.
  3. Cook, stirring constantly, till mixture thickens and bubbles. Stir in Sausage and corn.
  4. Pour over sliced eggs. Slice remaining 2 hard cooked eggs, arrange eggs on top of sausage mixture.
  5. Sprinkle with soft breadcrumbs.
  6. Bake in moderate oven (375 degrees) for 20to 25 minutes or till heated through. Makes 6 servings.

Bass Farm Sausage and Egg Burrito Bar

Ingredients

  • 1 package Bass Farm Hot Sausage
  • 1 cup chopped red bell pepper
  • 2 jalapeno peppers, seeded, chopped
  • 8 eggs
  • 2 tablespoons milk
  • 4 ounces cream cheese, cut into 1 inch cubes
  • 8 flour tortillas (10"), warmed
  • Assorted Toppings:
  • Shredded Mexican cheese blend
  • Black Beans, drained, rinsed
  • Chopped tomatoes
  • Chopped avocado
  • Salsa and sour cream

Instructions

  1. Cook sausage, red pepper and jalapeno pepper in a large skillet over medium-high heat 8-10 minutes or until sausage is thoroughly cooked, stirring frequently, drain. Return sausage mixture to skillet.
  2. Beat eggs and milk in medium bowl with wire whisk until well blended. Add to skillet; cover over medium heat 5-6 minutes or until eggs are set, stirring occasionally. Stir in cream cheese; heat until melted. Keep warm in electric skillet or slow cooker.
  3. Place assorted toppings in small bowls.
  4. Build your own burritos; Spoon sausage mixture down centers of tortillas; top with favorite topping. Fold in opposite sides for each tortilla, and then roll up burrito style.
  5. Serve immediately.

Bass Farm Sloppy Joes

Ingredients

  • 1 package Bass Farm Sausage Mild Sausage
  • 1 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 8 ounces tomato sauce
  • 1/2 cup chili sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon Worcestershire sauce
  • 8 hamburger buns or kaiser rolls, split
  • 1 cup shredded sharp cheddar cheese

Instructions

  1. Cook sausage, onion and pepper in large skillet over medium-high heat 8-10 minutes or until sausage is thoroughly cooked, stirring frequently; drain. Return to skillet.
  2. Stir in tomato sauce, chili sauce, sugar and Worcestershire sauce. Reduce heat to medium-low; simmer 3-4 minutes or until sausage mixture is thoroughly heated, stirring occasionally.
  3. Fill buns with sausage mixture and cheese.
  4. Cook's tip: Prepare using 1 pkg. of Bass Farm Hot for a little extra kick! Makes: 8 servings (1 sandwich each)

Holiday Recipe: Glazed Sausage Bites

Ingredients

  • 1 pound Bass Farm Sausage
  • 1 slightly beaten egg
  • 1/2 cup fine cracker crumbs
  • 1/3 cup milk
  • 1/2 teaspoon sage

Instructions

  1. Combine all ingredients. Beat at high speed for 5 minutes.
  2. Shape into 48 1-inch balls.
  3. Brown shortly on all sides, about 10 minutes. Pour off excess fat.
  4. Combine: 1/2 cup water, 1/4 cup catsup, 2 tablespoons brown sugar, 1 tablespoon vinegar, 1 tablespoon soy sauce
  5. Add to sausage balls and simmer 15 minutes, stirring occasionally.

Cornbread and Sausage Stuffing

Cook Time: 1 hour, 20 minutes

Cornbread and Sausage Stuffing

Ingredients

  • 1 pound Bass Farm Sausage (Hot or Mild)
  • 4 tablespoons of butter or margarine
  • 1 large onion (diced)
  • 6 cups white bread cubes (about 12 slices)
  • 1 8-inch square pan cornbread (crumbled)
  • 3/4 tablespoon of salt
  • 3 large celery stalks (diced)
  • 2 cups water
  • 1/2 tablespoon pepper
  • 1/2 tablespoon rubbed sage
  • 1/2 tablespoon thyme leaves

Instructions

  1. Cook and crumble pork sausage in a large Dutch oven over medium heat (stirring to brown).
  2. Move sausage to a large bowl.
  3. To drippings in pan, add butter, celery, onion, and cook until tender, stirring occasionally.
  4. Add sauteed vegetables and all other ingredients to sausage in pan, toss to mix well.
  5. Use to stuff 12 to 16 pound turkey. Or spoon stuffing into a 13" x 9" baking dish; Cover with foil and bake in a 325 degree oven for one hour.
  6. Uncover and bake 15-20 minutes longer til brown.
  7. Makes 12 cups, or 24 half-cup servings.
