Mock Chop Suey

Mock Chop Suey

Ingredients

  • 1 package broad noodles
  • 1/2 cup green pepper
  • 1 cup celery
  • 1 cup onion
  • dash of salt and pepper to taste
  • 1 1/2 pounds ground beef
  • 1/2 pound Bass Farm ground sausage
  • 2 cans tomato soup
  • sage to taste

Instructions

  1. Cook noodles in boiling salt water until tender.
  2. Brown ground beef and pork in deep frying pan, add green pepper, celery and onion; let cook about 20-30 minutes.
  3. Add tomato soup. When mixture has come to a boil, add noodles.
  4. Place in buttered casserole and dot with butter.
  5. Bake in oven at 325 degrees for 1 hour. Serve hot.

Sausage and Rice – Chinese Style

Sausage and Rice – Chinese Style

Cook Time: 2 hours, 15 minutes

Yield: 10-12 servings.

Sausage and Rice – Chinese Style

Ingredients

  • 2 pounds Bass Farm ground sausage (1 package hot and 1 package mild)
  • 8 stalks celery - diced
  • 1 large onion - chopped
  • 3 packages Lipton's chicken noodle soup mix (dried)
  • 9 cups boiling water
  • 2 cups minute rice
  • 1/4 cup soy sauce
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 3/4 cup slivered almonds

Instructions

  1. Brown sausage, celery and onions in large skillet, breaking up meat with fork. Drain all fat.
  2. Meanwhile bring 9 cups water to boil, add soup mix and cook according to package directions.
  3. Add meat mixture to soup mixture, then add all remaining ingredients. Reserve some of the almonds to sprinkle on top of the casserole.
  4. Pour into 1 large 4-quart casserole or 2 2-quart casseroles.
  5. Bake covered at 325 degrees for 1 1/2 hours, remove cover and bake 45 minutes more.
  6. Serves 10-12. May be cooked, frozen, and reheated. Great served with a green vegetable and a cranberry salad and rolls if desired. Also great for a picnic.

Sausage Strata

Sausage Strata

Cook Time: 30 minutes

Yield: 6 servings

Sausage Strata

Ingredients

  • 6 Slices white bread
  • 1 pound Bass Farm ground sausage, mild or hot
  • 1 teaspoon prepared mustard
  • 4 ounces processed Swiss cheese, shredded (1 cup)
  • 3 slightly beaten eggs
  • 1 1/4 cups milk
  • 3/4 cup light cream
  • 1 teaspoon Worcestershire sauce
  • dash of ground pepper and nutmeg

Instructions

  1. Fit bread into bottom of greased 12 x 7 1/2 x 2 inch baking dish.
  2. Brown sausage; drain off all excess fat. Stir in mustard.
  3. Spoon sausage evenly over bread; sprinkle with cheese.
  4. Combine eggs, milk, and cream, Worcestershire, 1/2 teaspoon salt, dash pepper, and dash ground nutmeg; pour over cheese.
  5. Bake at 325 for 30 minutes or until set. Makes 6 servings.

Corn Sausage Casserole

Corn Sausage Casserole

Cook Time: 20 minutes

Yield: 6 servings

Ingredients

  • 6 pieces Bass Farm Link Sausage
  • 3 tablespoons chopped green pepper
  • 2 tablespoons chopped onion
  • 3 tablespoons flour
  • 1 teaspoon salt
  • 3/4 cup milk
  • 2 eggs beaten
  • 1 can (16oz.) cream-style corn
  • 1 recipe biscuit dough

Instructions

  1. Brown sausage, set aside. Fry green pepper and onion in 4 tablespoons sausage drippings.
  2. Blend in flour and salt, remove from heat.
  3. Blend in milk, eggs and corn; return to heat, stirring until mixture is heated through.
  4. Pour into casserole, cover with biscuit dough.
  5. Cut slits in dough, slip sausages through vertically, leaving sausages partially sticking out.
  6. Bake for 20 minutes at 425 degrees. Makes 6 servings.

Stuffed Sausage Roll

Stuffed Sausage Roll

Cook Time: 45 minutes

Yield: 6 servings

Ingredients

  • 2 pounds Bass Farm Sausage (ground)
  • 2 cups diced raw tart apples
  • 2 cups bread crumbs
  • 2 small onions, diced

Instructions

  1. On wax paper, pat the sausage into a flat, rectangular shape about 1/2 inch thick.
  2. Mix the apples, breadcrumbs, and onion and spread over meat.
  3. Roll like a jellyroll, tucking in the edges.
  4. Place in a flat baking dish and bake at 350 degrees about 45 minutes. Makes 6 servings.

Sausage Pop-Ins

Sausage Pop-Ins

Cook Time: 15 minutes

Yield: 24 snacks

Ingredients

  • 1/2 pound Bass Farm ground sausage (hot or mild)
  • 1 package (8 ounces) cream cheese
  • 12 slices white bread, crust removed
  • 12 slices bacon, cut in half
  • wooden picks

Instructions

  1. Cook sausage, drain, and crumble.
  2. Mix with cream cheese, mixing until of spreadable consistency.
  3. Cut each slice of bread in half. You will have 24 rectangles.
  4. Spread sausage-cheese mixture on each rectangle of bread.
  5. Roll bread up and wrap one piece of bacon around it. Secure with wooden pick.
  6. Bake on ungreased cookie sheet for 15 minutes at 350 degrees. Makes 24 snacks.
